Honey Mustard Pork Tenderloin

This is a great slow cooker recipe adapted from SouthernFood.com. This can be served sliced with rice. Or shred pork and serve it as a pulled pork sandwich.
Honey Mustard Pork Tenderloin
  • 2 pork tenderloins, about 1 pound each (Or use other cuts of pork)
  • 1 tbsp vegetable oil
  • salt and pepper
  • 1/2 cup beef stock

Wash and trim the pork and pat dry; sprinkle lightly with salt and pepper. Heat oil in skillet on med high until smoking, brown one tenderloin at a time, on all sides (5-7 min each). Once browned, place in slow cooker. Deglaze pan using beef stock, stirring up browned bits. Pour into slow cooker. Combine garlic, mustard, honey, brown sugar, vinegar, and thyme; pour over the pork.

  • 2 small clove garlic, minced
  • 1/2 cup Dijon mustard
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 2 tbsp cider vinegar or balsamic vinegar
  • 1 tsp dried thyme
Turn pork to coat thoroughly. Cover and cook on LOW for 7-8 hours, or on HIGH for 4 hours. Remove pork to a plate, cover with foil, and keep warm. Pour the juices into a saucepan and bring to a boil over medium heat. Simmer for 8 to 10 minutes, or until reduced by about one-third.
  • 2 tbsp cornstarch
  • 2 tbsp  cold water

Combine the cornstarch and cold water; whisk into the reduced juices and cook for 1 minute longer. Serve pork sliced with the thickened juices or shred cooked pork and serve it as a pulled pork sandwich.
