“Superman” Cake: Yellow Cake with Chocolate & Peanut Butter Frosting

The hubs is now home after a month-long deployment. I asked the kids what to make him besides the Welcome Home banner. Their answer: a cake, a Superman cake to be exact. But there wasn’t time for that! Instead I combined two of his favorites: chocolate & peanut butter. I made a boxed yellow cake mix in two 9-inch rounds, then added a chocolate & peanut butter filling and frosted it with Chocolate Peanut Butter Frosting (adapted from Hershey’s “Perfectly Chocolate” Frosting). This delish chocolate double-decker is still being called a Superman cake.

I’d like to wish Superman a big “welcome home.”

Superman Cake: Yellow Cake with Chocolate Peanut Butter Filling & Frosting

Prepare yellow cake mix in two layers according to package directions. While the layers are cooling prepare the filling and frosting.

Peanut Butter & Chocolate Filling

1/2 cup (3 oz) high-quality chocolate chips
2 tablespoons peanut butter (or more depending on desired peanut taste)

Place ingredients in a heat-proof bowl. In twenty-second increments, heat chocolate and stir until melted, being careful not to burn. Once melted through, set aside, allowing to cool slightly before use.

Once the cake layers cool, place bottom later on cake plate. Using a serrated knife, cut off the top of the cake to remove domed shape, creating a flat surface. Once filling is cooled slightly (not piping hot) pour over bottom layer. Spread out if necessary. Carefully place second layer on top. Next prepare the frosting.

Peanut Butter & Chocolate Frosting

1/4 cup butter or margarine
1/4 cup peanut butter
2/3 cup cocoa
3 cups powdered sugar
1/3 cup milk

Melt butters. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. About 2 cups frosting.

Apply a thin ‘crumb coat’ on the cake top and sides. Place cake in the refrigerator for 20 minutes or until the frosting has hardened slightly. Apply the rest of the frosting. Garnish with peanut butter cups, chopped or chocolate chips if desired.

    We make a frosting like this! It’s called “kronhofman frosting.” Its sooooo goooood. But involves crisco… and very much fat… 🙂
