Cornmeal Pancakes: Pumpkin or Banana?

When we have guests in town and I like making a special breakfast. These cornmeal pancakes are a delicious treat.

I’m actually making breakfast for supper tonight, doubling my batch, and freezing the extra for guests’ arrival next week.

I created this Pumpkin Nutmeg variation from Emeril’s original recipe. Pumpkin would be perfect if you have some leftover puree from Thanksgiving baking.

The original recipe used only the egg whites, but I found that the cakes stuck to the pan, but with the added yolks–problem solved.

Pumpkin Nutmeg Cornmeal Pancakes

Ingredients

1 cup cornmeal
1 cup flour (I used whole wheat)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon allspice
1-1/2 teaspoons baking soda
3 tablespoons brown sugar
Pinch salt
1 cup plain yogurt (I used plain Greek)
1 teaspoon vanilla extract
3/4 cup milk
2 tablespoons unsalted butter, melted
3 eggs, separated
1/2 c pumpkin puree
Vegetable oil for cast iron skillet

Directions

Heat a cast iron pan over low heat to warm up for 5 minutes.

In a large bowl combine the cornmeal and flour. Stir in the spices, baking soda together and add to the bowl. Add a pinch of salt. In another bowl combine the yogurt, vanilla, brown sugar, and milk. In another bowl melt butter, add three yolks and fruit puree. Using a wooden spoon, stir the milk mixture into the dry ingredients. Lightly fold in the fruit mixture. Beat the egg whites until soft peaks form. Gently fold in the egg whites.

Add 1 teaspoon of oil to the skillet and add 1/4 cup of batter to the pan, spreading the batter to form even pancakes. Cook until bubbles cover the surface, flip and cook until golden underneath. Continue with the remaining batter. Serve immediately with butter and syrup.

Banana Cornmeal Pancakes variation: Substitute pumpkin puree with one ripe banana, mashed. Omit nutmeg and allspice.
