….The Return Of The Chicken

Part III – Bruschetta Chicken Bake made with Stove Top Stuffing. It’s a great tasting casserole that is quick and easy. Perfect for Thanksgiving week when stuffing is on sale. So stock up and take advantage.

This gem came from Sherri. She made it for us one day and found out that it was a recipe-on-the-box dish, I was shocked. So good.

I highly recommend serving this dish with jarred pesto. We served each piece with a dollop of pesto spread on top. It was a great way to add dimension while not adding prep time. Yummy!

Well, the Trilogy has been a refreshing rest full of delicious meals. I give it a hearty two thumbs up.

Oh, wait, Thanksgiving approaches. Let the cooking begin!!! Are you ready?

Bruschetta Chicken Bake (with Stove Top Stuffing)

Instructions

1 can (14-1/2 oz.) diced tomatoes, undrained
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup water
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. dried basil leaves (I substituted 1. tsp pesto)
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese
Jarred Pesto for serving

Directions

HEAT oven to 400ºF. MIX tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened. (I added my pesto here)
LAYER chicken, basil and cheese in 3-qt. casserole or 13×9-inch baking dish.
TOP with stuffing. (I added more cheese on top). Bake 30 minutes or until chicken is done.
