Caramelized Onion and Goat Cheese Pizza

Pizza, another pizza? Yes, we’re a pizza family. It’s so easy with the Bread In Five Minutes technique. This unkneaded dough can be kept in the fridge for a week or more, and makes for a quick supper.

Olive Oil dough, see No Need to Knead post

2 tablespoons olive oil
2 medium yellow onions, peeled and cut into 1/8-inch-thick slices
1 bay leaf
2 teaspoons fresh thyme (or 1 teaspoon dried)
Salt and pepper to taste
